Jeg er SÅ KED AF at denne opskrift er med tre dages forsinkelse. Jeg lovede at den skulle udkomme i fredags, men så var der totalt kaos, og tekniske problemer når jeg forsøgte at udgive. I weekenden har min dejlige far været på besøg her i London, og han har hjulpet mig med at flytte i noget helt nyt og lækkert i Notting Hill. Det bedste af det hele er, at der er en som kommer og bor med mig om små to uger – én jeg er meget, meget glad for. Yay!
I’ve been totally M.I.A. for the past weekend, and for that I apologize! I meant to post this on Friday, and promised so on Instagram (@simpelsundhed_emiliehaaber) but then I was met with technical issues and a weekend of moving. But here it is!
The weather just gets crazier and crazier – it’s windy and rainy outside and I am in complete need of an umbrella. When I finally make my way home, I like to cuddle up with a warming soup between my hands. I had that kind of day where I basically just open my cupboards and fridge to find… nothing really. And the rain made me NOT want to go grocery shopping.
But honestly, that’s one of my favorite challenges haha! Having to make up some sort of food out of nothing is always fun. So I came up with this savoury and vegan kale soup with tons of flavor. It made the house smell yummy and it tastes so good as well. And the best part? You can change it up exactly how you want and watch your favorite funny tv-show while it’s cooking on the stove!
5 large handfuls of fresh and washed kale / 5 store håndfulde frisk, skyllet grønkål
½ large onion, chopped / ½ stort løg, hakket
2.5 cups cold water / 2.5 cups koldt vand
Pre-cooked spelt kernels, quinoa or rice / Forkogte speltkerner, quinoa eller ris
1 garlic clove / 1 fed hvidløg
Salt, pepper, curry, chili flakes as needed / Salt, peber, karry, chiliflager efter behov
Oil for frying / Olie til stegning
How to: Heat the oil in a medium sized pot and add the garlic clove and chopped onion. After a couple of minutes add half the water, the freshly cut kale and spices. Add the rest of the water and the spelt kernels, bring to a boil and turn down the heat. Let simmer for 20 minutes and serve right away!

You can easily swap the green kale for another leafy green such as spinach, chard kale etc. Feel free to add a little bit of coconut cream for thicker soup, and try some other spices like oregano or dried basil or thyme.
The spelt kernels can easily be swapped for pre-cooked long grain brown rice, quinoa or even noodles for a more Asian twist. Try add some fresh cut fennel along with the onion if you like the taste of that, too! Be creative guys!
The soup is VEGAN and can be made GLUTENFREE.
